What you need:

½ cup cottage cheese

½ cup plain yogurt

1 packet ranch seasoning

½ cup buffalo sauce

2 cups diced rotisserie chicken or other cooked chicken

Salt and freshly ground black pepper

8 ounces Kaizen ziti or regular pasta

1 cup shredded Cheddar cheese

2 scallions, white and green parts, finely chopped

1 tsp crushed red pepper flakes

How you make it:

1.Preheat oven to 400°F.

2.In a food processor, combine the cottage cheese, yogurt, ranch seasoning, and buffalo sauce and blend for about a minute, until smooth.

3.In a medium oven-safe dish, combine the chicken and the sauce, mixing until the chicken is evenly coated. Add salt and pepper to taste.

4.Cook the pasta per the instructions on the packaging.

5.Add the cooked pasta to the dish and give it another mix to blend the pasta with the chicken and sauce. Top with the shredded Cheddar.

6.Bake for 12 to 15 minutes, until the cheese is melted.

7.Remove from the oven and top with the scallions and red pepper flakes.

ENJOY!
